Why miniature?...

In the late 1960’s ranchers started to breed larger cattle. A few did not believe bigger was better and selectively bred to maintain the smaller animal.

Thicker and chunkier in appearance, Miniature Herefords are just the opposite of the extra large beef cattle of today.

Some say the smaller size has shorter muscle length and definition, in theory resulting in more tender meat. (not yet scientifically proven)

Smaller size means a more appropriate steak size. A lot of the steaks you see today cover a dinner plate. Considering recommended serving sizes today, Mini Hereford steak is right on the money.

New adventures.

2011 is sure to be a year of new adventures. Babies. More fence. More hay to bale. Another barn.

Late last year the Soost family made an investment into a small herd of miniature Hereford cattle. We started in 2009 with a few steers to raise and put meat in the freezer. After a successful year, we took on four steers in 2010. The process has been one of learning, adapting, adjusting, hard work, and FUN!
